Quick Summer Bean & Corn Salad
Summer is upon us, tis the season of barbecues, family gatherings and picnics! This super simple Bean & Corn Salad makes for the perfect party dish. Whip it up in advance or the day of and enjoy this high protein side dish.
Servings: 6 (1-cup per serving)
1 bag (12 oz) of Frozen Corn, defrosted (or 2-3 fresh corn, removed from cob)
1 can (15 oz) Black Beans, rinsed and strained
1 small Red Onion, chopped
1 Avocados, chopped
8-10oz Cherry Tomatoes, Sliced or leave whole
Juice of 1-2 Lime, to taste
2-4 TSBP Cilantro, chopped
Assemble ingredients. That’s it!
