Apple & Butternut Squash Bake
This recipe is the perfect way to start the fall season. Use this sweet and savory bake as a side dish, salad topper or even as a breakfast.

Ingredients: 

1 medium butternut squash, peeled & cubed
3-4 red apples (we love Gala), peeled & cubed
3 dates, pitted and chopped
3 tbsp olive oil
1/4 cup brown sugar
1 tbsp cinnamon
1/2 cup shelled walnuts

Directions: 

  1. Prep butternut squash, apples & dates (TIP: you can find butternut squash already cubed in most grocery stores!)

  2. Mix together all ingredients EXCEPT nuts in a large bowl (add nuts in at the very end)

  3. Spread out on a baking tray lined with aluminum foil (no clean-up)

  4. Bake at 450F, mixing occasionally for 30-40 minutes or until butternut squash is tender enough to pierce with a fork.

  5. Mix in nuts and serve hot or cold

Nutrition (per serving, makes apron 8 servings): 200 calories, 24g carb, 3g dietary fiber, 2g protein, 10g fat
