Light Passover Apple Kugel Recipe

It’s hard enough finding Kosher for Passover recipes, let alone healthy ones! This recipe came to us out of creativity and just experimenting with various ingredients in the kitchen. It is something you can make in minutes, yet is tasty and filling. Hope you agree!

Indulge in it as it a dessert topped with Greek Yogurt or Light Cool Whip, enjoy it as a quick breakfast option or have it for a high fiber and protein snack in the afternoon.

Ingredients:

1 egg + 2 egg whites
1 cup diced apples (red and/or green)
1/2 sheet whole wheat matzo

1 tsp cinnamon
Dash of salt
1/4 cup almond milk
2 packets of Splenda/Stevia or 1 tbsp of honey to sweeten (optional)
2 tbsp chopped walnuts (optional)

 

Directions:

Preheat oven to 350°F. Mix eggs in bowl with honey (or sweetener), salt, almond milk and cinnamon. Add Apple slices. Soak matzo for 1 minute in water and then break it up into mixture. Add nuts if desired. Mix all ingredients well and pour into greased baking dish. Bake in oven for 25-30 minutes.  Top with plain Greek yogurt or enjoy it plain!
